Flaky Pie Crust

This recipe goes with the Quiche recipe below. But it can be used for any pie recipe as well.
Flaky Pie Crust

1 1/3 cup unbleached flour (double if making lattice on top)
  You can also use sprouted flour, but it doesn't turn out flaky! You could use a combination of both flours.
pinch of sea salt
1 stick (1/2 cup) very cold pasture butter
1 pastured egg, beaten (you can add an extra egg yolk for more nourishment)
3 tablespoons cold milk or water (you may not need this much, but have it on hand ready to pour in just in case.)

This recipe is much easier if you use a food processor! I recommend this one:KitchenAid KFP740CR 9-Cup Food Processor with 4-Cup Mini Bowl, Chrome
  • Crust: Combine flour and salt. Place butter on board and cut into small pieces. Add butter over flour and pu in food processor or with pastry cutter Oxo Good Grips Dough Blender just enough to form pea-sized flakes of butter and flour.
  • Pour beaten egg into over mix. Combine with pastry utensil/processor.
  • Dough should start forming into a ball. If it's not then add:
  •  3 rounded tblsp of COLD fresh milk. Combine again. A dry dough should be starting to form and should be able to stick into a ball with a little coaxing. If it's still too dry add one more spoonful of milk.
  • Once it forms a loose ball wrap in saran wrap and store in fridge. Roll out when ready to use. I find that the butter becomes too warm and sticky to roll if I don't stick in the fridge for a little while.
  • To make rolling easier place ball between two sheets of parchment paper and roll out with rolling pin. Take one sheet off and flip over into your pan. Press down on remaining sheet. This is a less-mess easier to roll way to place a pie dough. Pinch or form edges
Continue with your recipe for quiche or pie.
To make enough for lattice work on top of a pie, double the recipe. There may be a little leftover, but better safe than sorry!

Don't go for the store-bought pie crusts. They are full of toxic trans-fat, preservatives, hydrogenated shortenings, high fructose corn syrup and all sorts of man-processed substances that are hazardous for your health. This pie crust will be a little more effort, but it's worth it to your health and it tastes much better! It feels good to make your own crust from scratch!
