Breakfast, Brunch or Dinner Quiche, About Eggs




Nourishing Quiche



You will need:
One recipe flaky pie crust http://www.nourishingcreations.com/2008/11/flaky-pie-crust.html (unbleached flour, grass-fed, butter, salt, egg, milk.)
1 bell pepper (choose your color!)
1 small onion, chopped
Any other veggies you want to add that you may have in the fridge! ( I used: zuchinni, cut into julienne strips, chopped spinach, tomatoes.) Mushrooms would be good too...
I chose to use chopped ham in this one, but you could use pastured, nitrate free bacon, etc.
2 tablespoons butter or ghee
4-5 pastured eggs depending on size of your pan
1/2 cup cream or whole milk
sea salt and pepper
1 cup freshly grated monterey jack, white cheddar or parmesan, divided

Crust: Roll out dought to line a 10- inch tart pan. ( A pie pan or round cake pan with removeable bottom) will suffice) Oil the pan. Half bake the crust at 325 for about 15 minutes. You may need to poke holes in crust to release air bubbles as it bakes.

Filling: Meanwhile, saute chopped onion in butter or ghee. Add bell pepper to pan, add additional vegetables until soft. Heat chopped ham or bacon through. Beat eggs with cream or milk (you could even throw in some sour cream), add salt and pepper, then add 1/2 cup of grated cheese.

Combine it: Once removed crust from oven, strew ham and vegetables evenly over crust. Pour egg mixture over vegetables. You could add remaining cheese now, or wait until finished baking depending on how you want it to look. Bake at 350 for about 30 minutes.

About Pastured Eggs

EGGS are the best source of high-quality (complete) protein. They've been around for millions of years, and have been providing man with nourishment for most of that time. Recent trends have made people fear this high quality and nutritionally perfect food (really bad idea!) Properly raised and pasture-fed eggs have EVERY nutrient man has discovered, and are a vital source of vitamin A and D- which are lacking in many people's diets. Especially because there are so few food sources of vitamin D. (the sun is the main source.) I can't say the same for battery-raised hens/eggs, but I assume they still have some of these nutrients- but they aren't outside eating their natural diet of grass and bugs. 


I have fed my baby egg yolk since she was 6 months old. They are a great source of essential tissue building cholesterol and fatty acids. They are needed for babies eye and brain development. I have tried to find the best quality eggs I can for her and I. Find a Local Farmer and  Try it, you'll be convinced by their BRIGHT yellow, sometimes almost orange yolks. A sign of their rich diet of beta carotene from grass and bugs.
